New York sushi chefs wear plastic gloves for cooking
Chefs wear plastic gloves, as legally required, to cook sushi at Sushi of Gari, a high-end restaurant in New York, on July 29, 2015. The U.S. city's health department introduced new regulations, effective Aug. 8, requiring fish served raw to be frozen but some chefs complain it would destroy the taste of some types of fish that degrade when thawed.
