Sano ramen
Photo taken on Dec. 19, 2019, in Sano, Tochigi Prefecture, north of Tokyo, shows a bowl of Sano ramen. Sano ramen is characterized by a clear soy sauce-based broth and handmade noodles made with the "green bamboo" rolling technique. The technique involves rolling the dough for the ramen with a thick piece of bamboo, which the roller presses down on with their knee for increased weight, making the noodles very smooth. (Kyodo)
