Enchilada Fair In Mexico
View of enchiladas on the occasion of the Enchilada Fair on the esplanade of the Iztapalapa mayor's office in Mexico City, which brought together around 39 exhibitors from different neighborhoods to offer a wide variety of the preparation of enchiladas - a typical Mexican dish based tortilla, spicy or non-spicy sauce and stew - as part of the support programs for the local economy of said district.
According to the National Institute of Anthropology and History, this dish has its origins in pre-Columbian civilizations, even present in the Florentine Codex that mentions the word chillapitzalli, which is made up of the Nahuatl word chilli, which means chili, and tlapitzalli. which means flute, that is, flauta enchilada, described in the same text as a corn tortilla and chili dish.
