In Nagqu, a prefecture-level city in Xizang with an average altitude of over 4,500 meters, water boils at around 85 degrees Celsius. Pressure cookers address this problem, as they increase internal pressure through continuous heating, which raises boiling point of water, and hence, speeds up cooking process. The new product, ''Takitate Ichizen'' (a freshly cooked cup of rice), developed by a ceramic ware wholesaler named Yamashita Toki in the town of Hasami, Nagasaki Prefecture, has been popular among the elderly and businessmen living away from their families, who have often ended up with too much cooked rice whenever they used rice cookers.
