Lavender fields, July 8, 2024, in Brihuega, Guadalajara, Castilla-La Mancha (Spain). In July, the lavender fields in Brihuega (Guadalajara) bloom, covering more than a thousand hectares. At the end of July or beginning of August, the flower begins to lose its color and turns grayish, marking the time for harvesting. Brihuega was the Spanish pioneer in lavender cultivation 30 years ago. In these fields alone, harvesting reaches up to 2,500 kilos of essence per day.
